The following thought occurred to me when conversing with Oliva offline.
Grassfed, and wild, is good for you for obvious reasons.  But not because
it's lean or "low in saturated fats."  It's leanness is a SHORTCOMING.
Like Omega 3, saturated fat is an "essential fat."  And since it is scarce
in the lean meat of grassfed beef, you better be supplementing with
saturated fats from either other parts of the cow or from outside sources.
