One other thing besides allergies, is that there is a
condition that affects mostly elderly people, called
"postprandial hypotension," and is apparently related
to carbohydrate intake. I think that human blood
pressure normally falls a little after eating, and
hence pulse may increase to compensate. In elderly
people, though, the reaction can be extreme and they
can faint from it so it can be dangerous.
