Anybody have a simple recipe for pancakes.  I actually substituted gf flour
for regular flour in a recipe that I have.  They were good pancakes, just not
real fluffy, any suggestions.

When substituting gf flour in recipes that call for regular flour what
actually happens.  What does gluten do for the recipe and what happens with the
absence of gluten?
