Thanks for the good suggestions, I will try both of them!  I have noticed
wheat gluten as an ingredient in some of the recipes I have for whole
wheat bread, in particular one that uses oat flour, but I would not have
thought of using it in the Italian bread or white sandwich bread recipes.
I will check my health food stores for the Better Than Milk soy powder
also and experiment with that.  Will let you know what works!
