Chevere, are you referring to glucose?
I have my fasting glucose level checked annually during my physical exam.
It is a blood test that is done at the same time as my regular blood work,
i.e., cholesterol, liver, kidney, etc.
The fasting glucose level is important, in my opinion (I'm not a doctor), as
part of the information re. the health of your heart. It is also important
to have a low fasting glucose level for cancer, diabetes, etc.
I have been mostly paleo for several years and my fasting glucose levels are
very low, even according to the new guidelines.
