Certainly the studies "proving" the harmful effects of saturated fat using
coconut oil were unfair because hydrogenated coconut oil was used, not natural,
unprocessed coconut oil. Look into articles by Enig and Fallon for more on
this topic. Also, with respect to other studies allegedly showing harmful
effects of saturated fat in terms of causing LDL to rise and HDL to lower, I've
yet to see one done in the context of a low-carb diet. Furthermore, if you take
a look at the info on thincs.org, you will begin to doubt whether cholesterol
levels matter much at all outside of getting as many people as possible on
statin drugs to increase revenues for certain statin drug manufacturers. In the
US, we are now as cholesterol obsessed as we are dietary fat obsessed.
