The stuff you can buy in markets is parboiled and devoid of much
nutrient value. There are many traditional recipes for further
cooking it, mostly with evil things like nightshades and corn:)
I can buy "green" or unsterilized tripe, which I feed to my dog. It
is definitely live and stirring with bacteria and enzymes, and is
probably wonderful. Although I've tasted it, I've not been able to
eat any quantity, nor do I imagine would many others. Judging by the
well-being of dogs who consume it regularly, I'd say it's a Paleo
dream come true, if we could stand to eat it.
