Hi everyone...it's me again! I have an update for the new year to share with
everyone.

My holidays went really well. My family made special meals for my mom and me,
and I ate very well!! When I returned home from school, I received package
after package from people who sent me samples and pamplets (THANKS...my dad
throws EVERYTHING away, including boxes with addresses on them, so that is
why I couldn't send thank you notes! But it was soooo greatly appreciated!!)
My mom and I sampled breads, cakes, (we loved the ENER-G donuts, which we put
homemade strawberry frosting on!) candy, etc... It was soo much fun. My
grandmother made us wonderful breads and cookies with rice and potato flour,
it was great.

Before we returned to school, my sister was diagnosed as well. My mom called
our University cafeteria manager, and he said that he would take care of
everything. We visited the chef as soon as we returned to school, and he
assured us that there would be "something" at every meal for us to eat. He
said he knew all about Gluten sensitivities, we are learning that is not the
case!! He told us that he couldn't provide us with bread or special GF meals
(too expensive I suppose? I am not sure). Well, my sister and I began eating
in the caf like he suggested. He wasn't very helpful, when we asked him about
the salad dressing, he told us that all Ranch dressing were GF!! Which we
know is not the case. The first day there was fried chicken and pasta on the
line...both containing Gluten obviously. At home, my mom made GF fried
chicken, pastas, and wonderful breads. My sister and I are now living off of
watermelons, salads and eggs in the morning. Needless to say I am pretty
hungry. I do have a WONDERFUL "GF fairy god-mother" who sends me wonderful
snacks which are pretty much all I am eating now..... I have spoken with my
mom and she isn't quite sure what to do.

I would love to make all of my own meals in my room (I have a small microwave
and so many people have sent me great ideas....the problem is I CANNOT afford
the specialty foods. Here in Nashville the sales tax is outrageous, and it is
hard to find a job with my intense schedule of classes. Basically, my sister
and I are scraping to find food we can eat in the caf, but we are taking out
loans to pay the $1,500 for the food on campus....

Does anyone have any new suggestions to help my sister and I??? I don't have
access to an oven or large fridge.

Thanks for listening (actually reading...) And thanks to all of my "angels"
who have helped me in the past! You don't know what a difference you have
made.....

Ashlie in Nashville
