Hi,
I just visited my local Noodles Restaurant, which not has a "hot list"
of allergens available for customers. I asked them if I could have any
sauce over their rice noodles and they were very happy to accomodate
me. So I had their new Penne Rosa sauce over rice noodles. Terrific!
The manager said the rice noodles are prepared under a different
process than the wheat noodles -- they are soaked overnight in their
own batch of water and not cooked with the regular pasta.
I believe Noodles is a new chain, so it may not yet be in your area.
They carry a Japanese rice noodle dish (but it has soy sauce) and a
Pad Thai rice noodle dish.
I also found at Costco a brand of frozen noodle dishes, based on Pad
Thai, and it appeared to be gluten free. I tried it with no symptoms,
and it was actually quite good.
