You can get both ostrich and buffalo from New West Foods
(www.newwestfoods.com, I think, or search for them via google).  They've
gone into mainstream supermarkets in several large population centers.
Can't remember the deal with ostrich, but the buffalo are free range until
the last few weeks.  Both are incredibly low in fat.  Most markets will
special-order products they don't carry; just talk to the manager.  Buffalo
is to DIE for!  Oh, God, don't tell PETA I said that...
