Some of you may remember my pancreas and brains cooking blunder.
From my recent readings, it seems that organ meats were prized by our
Paleolithic ancestors and made up a large part of their diet. So I am still
interested in perusing organ meats as part of my paleo cuisine. I'm pretty
good at cooking liver: sauteed with onions, garlic and rosemary.
I would appreciate some personal favorites and how you prepare them. Do not
point me to the paleo archives, been there. I would like some personal
suggestions.
BTW: Are heart and tongue that different from muscle meats to warrant
classification as organ meats?
