agree.

Guess it depends upon the individual.  I can consume, say, a glass or two of
wine and maybe a slice of cheese PER WEEK.  One serving of grains in any
form puts me out for three days to a week.

My advice would be to go strict paleo for one week -- no dairy, no grains,
no beans, no potatoes -- and then experiment with what you can add back in.
Otherwise, you'd likely miss the benchmark feeling of wellness you get when
you've eliminated foreign foods.
