Many years ago, in the Yukon, a local person (American aboriginal) showed me how to preserve a salmon:
sun and wind are all that is necessary, however he built a smoky fire with willow, saying that the smoke is
only to keep the flies off.
IMHO if smoked is like that, it must be paleo.
