Well, personally I wouldn't use Worcestershire Sauce.
I often make a dipping sauce using Thai fish sauce as the base.
Fish sauce is made from fish and salt - and fermented for a year.
The basis of my recipe is:
4 tbsp fish sauce
2 tbsp tamarind paste (or 4 tbsp lime juice)
1 tbsp honey (or 2 tbsp palm sugar)
The ingredients need to be fine-tuned to get the balance just right.
I usually add minced coriander roots and a few hot chillies, but
you might not want to use them for a jerky marinade.
If you have to use a soy-based sauce, at least use a naturally
fermented Japanese tamari. No added wheat.
