well, suppositions all, but here's three:
1) more time is required to get any one animal up to "market weight" on an
all
grass diet (just like people: give em grain side dishes in addition to
normal
calorie paleo meals and weight is quickly gained).

Having spoken to someone who used to raise some free-range cattle in
Pennsylvania, but gave it up because of the cost, I can attest that had
made much of this point. The meat business is competitive, and to make a
profit you must minimize the time from foaling to the butcher. I think he
said it takes ten extra months until a free-range animal is ready for
slaughter, and this made it impractical for him, given the low demand.
