Thank you to all who responded to my questions.
It seems I am most definitely not the only one who experiences mouth and throat irritation when comsuming gluten.  It also seems that many of you who never had the irritation began to experience it after going gf for a period of about one year. Most agree it's an allergic reaction and use it to alert themselves to hidden gluten.  Nobody had a comment from a doctor. A few people said they developed a wheat allergy in addition to celiac disease after going gluten free.
So, I guess this is another of the many symptoms of celiac disease we can expect.
