Dear all,
My friend recommended that I join this list, though I am still working on a
diagnosis. (My health care provider is so far not willing to test me,
though I'm still working my way up the food chain, so to speak.) The
chronic indigestion I had been experiencing has improved tremendously on a
GF diet, which I've been on basically for a month now.
I was wondering if anyone knew how much the genetic tests cost, since that
might be a better option to rule celiac in or out, since I'm not going back
on the old diet anytime soon!
Also, now that gluten is gone, I am realizing that a host of other foods
may be causing problems. I seem to have trouble with dairy (a commom
result of Celiac, I know) and soy, and anything hydrolyzed. I was
wondering if anyone out there knew enough about the chemistry of this
process to enlighten me as to whether I am reacting to the hydrolyzation of
things like soybean oil, etc., or the soybean oil itself. I figure since
this hydrolyzed stuff is in lots of junk food, it can't be good, but I was
hoping for some more specific info.
Also, can anyone give me hope that (assuming at the bottom of all this lies
a celiac condition) my intollerances to dairy and soy will fade as I
continue on a GF diet? GF is easy--and perhaps a good turn for a former
pasta/bread-a-holic--but GF plus soy and dairy free is a pain....
