Hi, Sorry to be so late in responding to this...I have trouble keeping up
with the volume of list-serv mails and just saw this as I was trying to clean
out my box.
I don't know where Prevention came up with their stats below, but I do know
that Americans consume far more calcium, than most people in the world, and
that along with the Dutch, Swedes, Danes, and Swiss, we consume more dairy
than anyone on the planet. Along with the same four populations, we also
have the highest rates of osteoporosis on the planet. Clearly, this isn't
strictly about how much is consumed; it never is. Instead, there are two
issues here; first, is the calcium being absorbed and assimilated, and
second, how much calcium are we flushing out of the system with a SAD diet.
I believe Prevention's numbers are way off the mark and are based on the
medical communities ideas about what the average person's nutrient needs are.
When eating a raw vegan diet, we're not acidifying the system and causing
the leaching of calcium to try to balance the pH. When eating a cooked
diet, no matter how much calcium is consumed, it won't be absorbed fast
enough to balance out the calcium being lost.
This is the problem with conventional nutrition wisdom -- it's based on
trying to see what works in sick bodies, those of the average population,
which even if not diagnosed with disease yet, are surely creating it as we
speak.
Our nutrient needs are tiny when we eat properly and the body is able to use
all of the nutrients consumed.
Like every other species on the planet, all we need to do is to eat only
those fresh, organic, ripe foods that the body is physiologically adapted
for, take care of our physiological needs in every other way, and nutrient
deficiencies will not happen.
So simple, and so true.
