Hi List Members:
I am back once again, but this time I have received numerous replies to my
summary that was posted to the list on August 6th, and people are much more
positive in their replies.
One person stated that their GI's state that it is rare to have other
medical problems associated with Celiac, well, it is a known researched
fact that there are several things that are connected with being Celiac.
Another stated that the diet was not difficult, well, I for one, and my son
for two find it very expensive and difficult and boring.  She also sent
another email apologizing and offering her assistance, and I thank you very
much for that, I will ask for help with recipes.
Another suggested the book "Going Against the Grain", and said also that we
might be the lucky ones to avoid flour/gluten.
Another thanked me for my comments and agrees with me!
Another states that she has great success baking/cooking Celiac meals using
the different flours that we are available to us.
And one states that for every 7 years of gluten ingesting, it takes one
year gluten free to heal, so with that in mind I should be just about
healed.  And may be could take a risk once in a while, it may even be worth
a slip now and again for old times sake.

Others also recommended Kinnickinnick for products that we can use safely.
So once again, thank you very much to all who took the time to let me know
your thoughts, and also give me ideas on eating Celiac.
