Throughout history people have traded even gold for salt -- it's that
important. Salt was important both for water homeostasis and preserving food.
Salt was scarce for paleolithic people -- greater abundance of potassium in
their foods. Today, salt is probably more prevalent. However, the kidneys are
phenomenal in their ability to dump excess minerals and maintain these
elements in very narrow margins even when intake is excessive. Today it's
very PC to be down on salt -- but the hard science is quite controversial
even for an association with blood pressure.
