Perhaps it wasn't dried enough, or your bag was damp/dirty?  i've heard it
keeps better frozen.
i too am venturing into the idea of  making my own jerky, but not quite sure
how to do it yet, or where to get the appropriate meat. I refuse to use the
crap they sell at the market.
Just got my copy of Paleodiet by cordain. my take on the whole fat/meat
thing is that game meat "tends" to be leaner, but i don't think paleo
peoples disregarded fat or lean.  THey ate what they had, they chose to hunt
fattier species in certain cases to store fat for the winter use when lean
stores were not sufficient.
not that i'm an expert or anything.
