Not exactly so. If you want to understand carbohydrates try reading
"Breaking the Vicious Cycle" by Elane Gottschall. It's nearly paleo (some
dairy and some beans) but it will explain carbohydrates very well in terms
of gut ecology (not insulin resistance).
