Haven't we been here before, like very recently?  IIRC, the reason was
related to the composition of the fat on meats today, versus the composition
in paleo times.  This may be a very important difference.

A peek into the archives or a re-read of the book might refresh you on this.
For myself, I am not afraid of fat, but I do not trust the fat on commercial
meat.  Most of us do not have access to wild or grass-fed meat.  So ... we
need to tweak a bit.
