Thanks so much for posting.  I'm amazed that salt is not necessary for jerky.
 Next time I make it -- I'll just season with just hot pepper.

Speaking of salt -- has anyone out there (especially paleo gals) stopped
adding salt to food entirely and noticed any difference ie less bloating at
that time of the month?  For most of my life I never used salt and then I
discovered Celtic Sea Salt and started adding it to meat.  I think it greatly
enhances the flavor of meat (I'd alway used a liberal amount of spices in the
past, just never salt).  However, it seems like now I have to salt my meat or
it seems super bland.  I'm wondering if adding salt to foods can become sort
of addictive?
