I've gained 15 pounds, and my body fat percentage hasn't
changed.   :-(  I'm assuming that this is because I am absorbing more
nutrition now that my digestive system isn't compromised by grains (I have
coeliac disease).

The only time I lose weight is when I go strictly no-carb.  However, if I
do that, I become weak and faint; I am unable to go to the gym and I am
unable to concentrate at work.

I think my problem is hormonal.  I am definitely hypothyroid and a blood
test last year showed that I have elevated AM cortisol levels.  I'm playing
around with my thyroid meds now and I'm trying to get my basal temperature
in the normal range.  Coeliac disease has been documented to produce
anti-thyroid antibodies, I'm pretty sure that 30 years of grains
significantly damaged my thyroid gland.  I'm not sure why my stress
hormones are so high, but this might have something to do with my previous
poor diet.  I am so intolerant to stress that I have had to move to a quiet
town in Colorado and get a fairly easy 9-5 job (less money).  Even if I
work late for one night, my legs start itching like crazy as I feel my
stress levels start to rise.

I've also recently found out that I am intolerant to salicylates, which are
in most fruits and vegetables.  I'm pretty sure that this is also a result
of the years of damage to my digestive and auto-immune system.

I guess not all of us repair ourselves quite so easily on a paleo-diet.
