FILLING:
3/4 pound ground beef
1 15 oz. can black beans
1 15 oz. can red kidney beans
1 small onion, minced
1 green bell pepper, diced
1 small can diced green chilies
1 8 oz. can tomatoe sauce
TOPPING:
1 cup cornmeal
1/2 cup GF flour
1/2 teaspoon xanthan gum
2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons oil or bacon grease
1 egg
1 cup soy milk or water
Preheat oven to 400 degrees F. In large skillet, brown beef, drain fat.
Add onions & saute until onions are clear. Stir in rest of filling
ingredients and let filling simmer while topping is prepared (about 5 or
10 minutes). Mix topping ingredients together. Pour filling into 9 x 13
inch pan. Pour topping over filling. Bake 15 minutes. Turn oven hear
off & let casserole sit in oven 20 minutes. ~Valerie in Tacoma, WA
