You probably already know that arrowroot is used mainly as a thickener. I omit it ALL THE TIME from stuff and can't hardly tell a difference... but then, I add it to stuff and can't tell a difference either... the only exception is when I make sweet and sour sauce - I use it to thicken and there I can tell a difference. Wish I knew more. I'm surprised no one else replied.
