It's Brand-Miller's baby. She decided to check out how much a given food
provokes the output of insulin -- everyone got all excited because it
appeared that some protein sources provoked insulin as much as carbos. And
that set the high carbers going. Unfortunately, Brand-Miller forgot her basic
biochemistry -- the fact that amino acids increase both insulin and glucagon
-- if they didn't, the body would lower blood sugar too much. GI is a
relative measure of how much a particular food increases blood sugar in a
given time -- either white bread or glucose is used as the standard against
which the others are compared.
