I don't know the fat profile of clarified butter, but according to the
Ayurveda it is very healthy and healing. The reason for this is that the
milk solids are removed in the clarification process, leaving only the fat
behind. Paleo or not, ghee is good for human consumption and has been used
for thousands of years.
