This letter really gives a nice feeling of what it might be like to travel in Ireland on a GF diet - so I include it here since many people asked for the results

I traveled around southern Ireland in Sept. We stayed in bed and breakfasts and moved to a new place each day. I brought my own cereal as I am not terribly fond of eggs and bacon. There was usually fresh fruit. There was also usually yogurt. The yogurt was in containers with labels and appeared fine to me.
We usually did not stop for lunch, but maybe a quick snack. It was often difficult to find a quick bite. I did find that potatoes of almost every variety are readily available and I do like them. Some days I only had a bowl of mashed potatoes for lunch. Of course, with your husband, you will probably have a more sympathetic person to travel with and could really explore better options.
In the evening we had some fantastic meals and didn't have any trouble with the gluten issue. The salmon was wonderful at several locations. There were also many excellent vegetables and always potatoes. We even ate at an Italian restaurant. All the sauces could be served over pasta, rice, boiled potatoes, or mashed potatoes. It was interesting.
We flew on Aer Lingus which actually did provide gluten free meals. I was surprised that they actually were gluten free and had extra food available. Other than my cereal, I didn't need additional food. It all depends on your food preferences. I even had dessert at a couple of places.
