This is for fans of Carol Fenster, whose book "Dietary Solutions" is
used on such a regular basis in my kitchen that I have had to cover with
plastic the pages with muffin mix and Irish soda bread recipes.
Starting with 2 1/3 cups of her muffin mix*, I add pumpkin pie spices to
taste (cinammon, cloves, nutmeg), a scant 1/4 c. brown sugar. Blend on
low speed.
Add in 1 cup cooked pumpkin pulp, 2 eggs (or 1 egg plus 4 tsps. Just
Whites if you want lower cholesterol), 3+ tbspns canola or other oil,
(about 1/2 tsp Stevia extract - liquid*), all slightly beaten together.
Mix on medium speed until well blended, at least 2 minutes. Add water
if the mixture is too thick - for good muffins I prefer a lighter
batter, but that is up to personal preference, and hard to guage in any
generalized way.
For a really scrumptious treat mix in about 1/2 cup broken pecans.
Bake at 375 for about 30 minutes. Cool on a rack.
Oh my.
I freeze them in batches of 4, as they stay moister this way.
*about the muffin mix: I make mine using sorghum flour in place of rice
flour. The sorghum is mixed with arrowroot: 7 parts sorghum to one
part arrowroot. Also, I do not use sugar, substituting in its place
Stevia. Sometimes I replace about 1/4 cup of the mix with rice bran for
texture.
