"Individuals who enjoy diets rich in meat, cheese and whole milk may be

at increased risk of developing cancer of the esophagus and the

stomach. The rates of two types of cancer--gastric cardia and

adenocarcinoma of the esophagus--have risen rapidly over the past 30

years. >>

The rate of carbohydrate consumption has also risen rapidly over the past 30
years. The rate of CALORIE consumption has also risen rapidly over the past
30 years. I would like to know what the rates of these cancers would be in
people eating the same amounts of meat, cheese and whole milk, whose diets
were controlled for carbohydrate and calorie content.

And, please indulge me in another few seconds on my perpetual soapbox, but
many types of gastric cancers are far more prevalent among untreated Celiacs
than in the general population. And with the dramatic increase in the
consumption of "those healthy grains" that the government food pyramid
extolls. . . You get the picture.
