yes, i think you are on to something here. i have done something like this
in the past -- way before low-carb or paleo -- and found soy (esp.
unfermented) to be a disadvantage to me. but that's about all. but perhaps
now, as the carb/metabolism issues begin to get resolved, the allergy
picture would come clearer.

i am eating lots of fat: mainly almonds, olive/oil, red meat, coconut fat
(for thyroid).

i gave up all cafiene except non-paleo indulgences -- which can take the
form of unsweetned (baking) chocolate. but the hypoglycemia still happens
when i haven't had it in a while.

true - when the little guy had colic, i cut out beans, milk, and brasacas
(whole cabbage family) on the advise of my midwife. it worked! we were all
happier. too bad, though -- broccoli is so nutritious.
