The very easiest way I know of to crack coconuts that I have found is to put the coconut in a pan  in the oven.  just leave it there until the nut cracks of it's own accord and the pan will catch the juice.  It doesn't seem to me to take long enough to hurt the juice or the meat.  I've used 350 degrees.  I'm sorry it's been so long, I don't remember how long it took to crack.
