The answer may be in that you eat a "lot" of food. Eating a large meal of protein can cause an insulin response equal to eating carbs. You need to keep the insulin response in mind as well as the glucose response to foods.
Small frequent meals keep insulin levels lower. Also spread what carbs you do eat evenly with protein and fat consumption.
Do you experience the hypoglycemia symptoms on Paleo when you are not breastfeeding?
