Marla,

I have used the Rich whip for years in place of whipping cream.  I use it
in recipes in place of whipping cream and have even used it with coffee
creamer to make my own fake ice cream.  It is sweet, but you can cut back a
little on the sugar in a recipe.  I have had a harder time finding it the
last couple of years.  Health food stores never carry it.  Both of the
large chains tell me they can't get it, but there is a premium grocery
store where I have been able to find it.
