Negative blood work (low antibody levels) means either 1)you are not a
celiac or 2)you are a celiac but you have not been exposed to
significant levels of gluten for a while (i.e., several weeks) and your
antibody levels have gone down to normal.
Conversely, if you are on a diet with gluten for a month or so and you
have normal antibody levels, you are not a celiac.
