Hi to all, Thanks for the recipe suggestions.

Check www.epicurious.com- Great resource for baking. I put in
"flourless" under search and came up with a few good looking recipes
I got several requests for the buckeye recipe. So here it is.

1. Buckeyes :These are popular here in Ohio, home of the buckeyes.
This recipe makes a lot so you might want to cut in half.

        3 lbs powdered sugar(make sure it's GF)
2 lbs GF creamy or crunchy peanut butter
1 lb butter or margarine softened
        24 ounces semisweet chocolate chips
2/3 cake paraffin (yes it's edible, buy it at grocery)
Mix sugar, peanut butter, and butter together, using a mixer or pastry
cutter. Roll the dough into little balls the size of buckeyes.
Refrigerate at least 2 hours. Melt in double boiler, choc. chips and
paraffin. Dip cold buckeye balls by a tooth pick into the melted choc.
mixture. Leave a small place on the top of the ball to look like a
buckeye. After removing the toothpick, smooth over toothpick hole with
your finger. Makes about 12 dozen.

2. Rice crispee treats made with either GF rice crispees of Rice
crunchems. You can put a little green food coloring in with the
margarine and then shape into wreaths. Decorate with mini red m&m for
berries.

3. Fudge is made without flour

4. Use your favorite chocolate chip recipe and substitute red and green
m&ms for the chocolate chips.

5. GF pretzels dipped in chocolate/paraffin mix(24 oz choc. chips plus
2/3 cake of paraffin melted over a double boiler), then sprinkled with
crushed up red and green m&ms. Let dry on wax paper.

6. Make the recipe in Bette Hagmann's first cookbook for Forgotten
Dreams (basically a meringue cookie) and substitute holiday M&Ms for the
butterscoth morsels. Beautiful cookies and very festive.

7. Peanut Butter Truffles. Simple, no cooking, either. Mix peanut
butter, non-fat milk powder (I used to use Carnation. But not sure if
it's GF these days), some honey, and raisins. Add more instant milk
powder if the mix looks too wet and won't form balls. Once formed, roll
in shredded coconut.

8. Easy to make Fruit Cake and no baking whatsoever. Originally
submitted to CakeRecipe.com. Makes 1 - 9 x 12 inch cake (36 servings).

        1 pound halved candied cherries
        4 cups chopped pecans
1 (14 ounce) can sweetened condensed milk
1 (14 ounce) can coconut milk
        1 cup flaked coconut
        1 cup raisins
        1 teaspoon vanilla extract
1 (12 ounce) package gluten free vanilla wafers or another similar
            cookie
Directions
1 In a large bowl mix the candied cherries, chopped pecans, sweetened
condensed milk, coconut milk, flaked coconut, raisins, vanilla, and crushed
gluten free vanilla wafers or similar gf cookies . Batter will be very
stiff. Place into pan and store in the refrigerator.

Happy Baking to All
Beth
