Because hard cheese is not in the same boat as other dairy. Its really more like a paleo food being only protein and saturated fat. Hard cheese contains no carbs or lactose (if aged such as cheddar, colby, swiss, harvati, parmesan etc.) Other dairy contains lactose and sugars which will "take you out".
