Jason,
using Microsoft Windows 2000 Server, you could run Terminal Services.
This way you can have hundreds of "sessions".
(Windows NT Server has something similar called Termial Server Edition etc.)
However this would require some sort of PC for each user (probably a 486 cpu
would be ok).
Depending on what you are after, also check out VMware - run an OS on top of
an OS.
When you say "2 monitors" do you also mean two mice and two keyboards?
Should these sessions be active at the same time? Two persons?
What is actually your situation, what are you trying to achive?
