This is a little long but worth the effort.
First thing you need to do is cut the eggplant in quarters.
Let it sit in the refrigerator for at least 12hours to alter the flavor.
Next you need to cut it into cubes.
Take the cubes and lightly stir fry in olive oil.
Than you need to boil the cubes for exactly 12 minutes.
Take the cubes and spread them out on an oiled cookie sheet and bake at 350
for 1 hour.
Take the cubes and boil again for 20 minutes.
Than mash it to a paste and work it into a ball.
Take the ball and throw it the neighbors cat.
