So you don't use any sugar at all..?  (neither does jean-claude) So all this
sugared commercial jerky is just the usual pandering to the universal sweet
tooth...?

That is something positive that you will find in  France ,they don't feel
the need to sweeten all the food , they even find weird when english eat
their meat with jam.
