I am happy to see the many recent posts to this List. (Thanks to Ginny for jump starting it again.) Our problems are more complex than those discussed in the Celiac-only List, and it's been enlightening to read how others are dealing with our dual dietary restrictions. Here's some of my own survival strategies:
1. An insulin pump has given me much more flexibility in covering the variables in carbohydrate/calorie intake.
2. Stay away from baked goodies; just because they are gluten-free, doesn't mean they have acceptable levels of fats or carbohydrates.
3. When I do eat GF baked goods (breads, cookies, crackers) I take much more insulin that I would previously for non-GF goods. Somehow the carbs are higher or denser, and make my blood sugars soar.
4. Face the fact that I have more restrictions than ever. Self-denial will build character! Just get on with life. Remind myself that truly healthy foods are allowed - vegetables, fruits, meats - and be glad that those foods are available to me. Think of all the starving children in China.
5. Test often so that I can quickly correct both a high blood sugar or low blood sugar.
It is definitely worth the time and trouble to do what we need to do in order to feel well. Good luck to each one.
