It does look a tiny bit like an ad, but I guess that's ok amongst friends!
BTW, they're called bison, not buffalo. And I just recently learned that when
native americans hunted animals, they always looked for the oldest, because
the old ones have the most amount of fat, in the belly and along the spine.
This they greatly relished (highly saturated fat, of course), and also all
the organ meats -- liver, kidneys, brains, etc. They frequently did not eat
the meat at all! And of course they did not have arteriosclerosis.
So all this crock about lean meat is just that -- you should eat the fat, and
discard the meat! Another story I just read is about rabbit starvation.
Rabbits do not have much fat on them, and if the natives were forced to live
entirely on rabbits, because of a drought or some such reason eliminated the
larger game, then they would eventually die of "rabbit starvation".
Of course these are wild animals, and modern farm raised animals have more
fat on them, and in the meat, so you probably do get enough fat just by
eating the meat. I guess one question is what does it taste like? Does it
taste "like beef", as I've seen some advertised, which presumably means does
not taste wild. Sounds good, though.
