Michael,
I agree with MikeE on the pointing mortar.  As for bedding mortar for large
granite units maybe something other than mortar.  Contact the owner (can't
remember his name, but uses Pentel, 0.4 medium line roller writers, black)
of Vermont Granite Works in Barre, Vermont.  He has seen just about every
spec. in the book.
