The list clearly shows that all the farmed meat items have very small
amounts of EFAs, except the organs and beefalo.
I suppose that's because beefalo isn't game actually, but a fed up animal.
According to the study mentioned by Udo, the MUFA interfere with EFA
activity and some of the SFA add to MUFA (by beeing converted to MUFA).
I think it just looks as if *no* natural food is low in EFAs (except some of
the seeds and nuts).
This is a practical fact. What else we have discussed (PGs etc) is still
striking, but this are more theoretical interpretations.
If we try to achieve a nutrition close to the paleolithic nutrition, I think
we should simply realize that farmed animal fat is just different.
Not paleo.
Not without thoughtfull supplementation.
After all, a lot of serious followups are connected to fats and to EFAs, we
have discussed about.

For prostaglandin systhesis enzymes for processing of the EFAs must be
available. If they are blocked or slowed by the MUFA+SFA then prostaglandin
systhesis will be blocked or slowed.
Except for the bad series PG2 prostaglandins, since ready made AA is present
in meat.
For membran maintenance, very small amounts may be "enough".
But which big difference could it make if membranes were made by 20%
different material.

I've looked at my blood fats, I'll post it if I have it present.
LA was in about the same amount as OA. Palmitic plus Stearic (SFA) together
about the same again.
From your table:
Beef - % of kcal as fat 63.65
Lamb - % of kcal as fat 64.59
Poultry - % kcal as fat 51.38
Game - % of kcal as fat 24.44
Fish - % of kcal as fat 29.55
Pork - % of kcal as fat 69.37
Vegetables - % kcal fat 9.63
Fruit - % of kcal as fat 11.70
Nuts & seeds - % kcal fat 55.53
If you select out the farmed products only Nuts&Seeds are the high ones in
fat. And Game still had 25%. But the game group has some farmed "game" in
it (beefalo, rabbit).
Select the farmed "game" out and the % of kcal as fat will be about half.
CLose to fruit then (!).
