This one I know a bit about......it grows wild here, and I spent
weeks researching the wild foods on our place.......the young
leaves of the kudzu can be used much like grape leaves .....
stuffed with something and cooked however one cooks
stuffed grape leaves...(don't know....never eaten them)
and the new tender tips of the vines can be steamed and
eaten much like asparagus......tasty.........usable in salads
also......but I've never tried to dig up the tubers............
By the way, if this stuff doesn't grow where you are....
give thanks!.......it is highly invasive and can make
so much shade it kills trees......
