In answer to your question about milk-free chocolate: it does exist! We
use Sunspire vegan dark chocolate chips. They are delicious alone or in
recipes. Just read the packaging closely. Some of the Sunspire
products are processed on shared equipment that also handles dairy, but
the variety we use specifically states that it is not processed on
shared equipment. So read carefully.

The proteins would be present in both milk and yogurt. The proteins are
proteins, no matter where they are, therefore should be digested in the
same
manner. It is my understanding that the proteins don't change whether
the
milk is raw or "sour."
I have a question for you-
what type of butter or margarine substitute do you give your daugher, if
any?
Also, I ordered a book on dairy free desserts, but many of them called
for
chocolate chips (which obviously contain milk), so what are people using
as
a "chocolate substitute?" I want my daughter to have a "treat" for
specail
occassions at school like the other kids get!
