I will be curious about the exact condition of the "study". because as i
know the lost of nutrients in not so fresh vegetables , i also see the
degradation that occur in a frozen food during thawing whre we might end up
with a lot of loss in a very short time and the creation of new compounds
that doesn't exist in the original product.( oxydations or whatever chemical
reactions happenning in cells that are bursted open by ice crystals.
Also there is more chance to have more degradation any way because of the
cooking that follow ( and may be more when they are frozen because less
likelly to be eaten raw .
Also lot of frozen vegetables are blanched , so not raw anymore , before
freezing so a comparaison need to be made with fresh vegetables that are
eaten raw .
Any way it is time , in the constatation of the state of depletion of
industrial foods, to makes illegal commerce of foods for money but to
produce your self and exchange food for food ( that will raise the quality
of foods available because people will know from first hand experience the
value of food and stop expecting "good deals ")
