All the recipes that came with it  (the ice cream maker) involve cream, and
I just don't know what to use as a substitute.

I use Rich's Non-dairy creamer for anything in which a sweet-milk or cream
is called for.  Although I've not made ice cream with it, I would think that
it would substitute well.
